They say necessity is the mother of invention. Once day I realized I had no curry powder left, but wanted to make a dish that was equally as comforting and tasty. In an added twist I also did not have any green seasoning left in the fridge so cilantro or scallion had to step in. A few ingredients later this delicious recipe was born.
Turmeric powder goes a long way so 1 tsp was sufficient for me. If you think the result is too light you can increase the next time around or add during the cooking process. It also all depends on the type of turmeric powder you have on hand.
If you are too lazy to follow any steps, heat oil, add all the ingredients and simmer until the chicken is fully cooked. I have done this several times when I am not in the mood to cook and it still turns out delicious.
Cut up chicken into 2 inch pieces. Place in a bowl and cover with water. Squeeze the juice of a lime or lemon and soak for 15 minutes. Clean, removing any feathers or fat and rinse to remove slime. Drain.
Heat oil in a medium pot over medium heat. Add onion, hot pepper(if using) and cook until brown, about 10 mins. Add turmeric, cardamom, cloves, cinnamon and 1/2 cup water and cook for 1 minute.
Add chicken, tomatoes and garlic and scallions or cilantro, salt and black pepper if using and stir to combine. Cover and simmer for 40-50 minutes until the chicken is fully cooked and the sauce has thickened.
