This is a summer favorite in our house. It's exceptional with the cilantro lime rice and a lovely garden salad.In this recipe, I cut chicken breast into cubes, wash and season with green seasoning, salt, black pepper, cumin, olive oil and sometimes lime or lemon juice. The ingredients are simple and the result incredible. It makes for a quick, light summer meal.
Place in a bowl, cover with water and squeeze the juice of a lime or lemon. Let it sit for several minutes. Rub chicken to remove any sliminess and rinse several times with water. Drain.
Season chicken with ¼ cup green seasoning, salt, black pepper, extra virgin olive oil, cumin, minced garlic and lemon juice if using. Marinate several hours or overnight in a bowl covered with plastic wrap or in a resealable bag.
When ready to grill, slide meat cubes into skewers alternating meat with red peppers or red onion.
Pre Heat grill. When hot place chicken skewers on grate and cook until charred. Flip and cook the other side until lightly charred as well.
Serve with rice, pasta salad, garden salad and cilantro dressing.
