Cajun shrimp and chicken pasta is a luxurious one pot meal and the ultimate comfort food. Chicken and shrimp are seasoned with my special homemade Cajun spice mix and homemade green seasoning, then pan fried in a single layer in batches until golden brown. They are removed to a plate and the onion, bell pepper, garlic, scallions are added to the pot and sautéed for a minute. A generous amount of heavy cream, three types of cheese and more spice mix are then added to attain perfection.
Cook pasta according to package instructions. Drain and mix in 1 tbs butter.
Wash and season chicken. Season with 1 tbs green seasoning and 1 tsp Cajun seasoning.
Wash and season shrimp with 2 tbs green seasoning and 1 tbs Cajun seasoning.
Heat 2 tbs oil and 2 tbs butter in a wide frying pan or skillet. Add chicken and cook until golden brown on both sides. Remove to a plate.
Add another 2 tbs of oil, when hot, add shrimp in a single layer and cook until golden brown. Flip and cook the other side. Repeat with the remaining shrimp.
Add 2 tbs more oil and 2 tbs butter, raise heat to high and add onion, garlic and cook for 2 minutes. Add peppers, mushrooms, scallions, hot pepper, 1 tbs spice mix and stir fry for another 2 mins.
Add 2 ¼ cups heavy cream, all the cheese, 1 tbs spice mix and stir for 2 mins.
