CRISPY PANKO FRIED SHRIMP WITH A SPICY MAYO SAUCE (BANG BANG SHRIMP)
Crispy fried shrimp with a spicy mayo sauce is the perfect snack or appetizer to satisfy the family or accompany you on game day or during those Netflix marathons —or not.
The cleaned shrimp is seasoned with pantry staples including garlic, oregano, onion powder, paprika, chili powder, salt and pepper. Marinating is optional. A batter is made with the same seasonings, flour and water and the shrimp is mixed in until fully coated. This allows the panko bread crumbs to stick to the shrimp, creating that crispy, crunchy texture when fried.
To make bang bang sauce, in a small bowl, mix mayo and sweet chili sauce or mayo ,hot sauce and honey. Set aside.
Wash shrimp with cold water and drain.
Season with dried spices, salt and pepper. Marinate for a min of 30 mins covered in the refrigerator.
In a medium bowl, add flour, spices, salt, pepper and one cup water. Mix well to combine.
Stir shrimp into batter and mix well to combine.
Heat oil in a frying pan over medium heat. Place shrimp, individually, in breadcrumbs and toss to fully coat. Drop into hot oil and repeat with the remaining shrimp. Do not overcrowd pot.
Fry until cooked and golden brown, one to two minutes. If it gets dark too quickly, reduce flame. If there is no bubbling action, raise heat.
