Instructions
Preparing the Pork Belly:
Begin by scraping the skin of the pork belly with a knife to remove any impurities or hair. Alternatively, you can burn off any hair using an open flame.
Cleaning and Preparing the Meat:
Place the pork belly in a large container and add 1 cup of vinegar and enough water to cover it. Give it a gentle rinse and then drain.
Rinse the pork belly once again, this time using the juice of a lime or lemon and water. Drain any excess liquid.
Marinating the Pork Belly:
Season the pork belly with green seasoning, all-purpose seasoning, adobo, oyster sauce, soy sauce, and salt. Ensure the meat is evenly coated with the seasonings.
Cover the bowl with plastic wrap and place it in the refrigerator to marinate for a minimum of 1 hour. For the best results, marinate the pork belly overnight. You can also season the pork belly, place it in freezer bags, seal tightly, and freeze it until you're ready to use it.
Preparing for Grilling:
When you're ready to grill, remove the pork belly from the refrigerator or freezer and allow it to come to room temperature.
Preheat your grill to medium-high heat. If using a charcoal grill, ensure that the coals are hot and covered in white ash.
Grilling the Pork Belly:
Place the seasoned pork belly on the grill. Cook it for approximately 15-20 minutes(if the lame is high it will cook in much less time), or until the skin becomes crispy and golden brown.
Flip the pork belly and continue grilling for another 15-20 minutes(sometimes much less so keep an eye out), or until the internal temperature reaches 145°F (63°C).
Oven Cooking Option:
If using the oven, place the seasoned pork belly in a single layer on a baking tray. Brush it with oil and place it under the broiler.
Flip the pork belly when it becomes charred but not burnt.
Basting with BBQ Sauce:
Once the meat is fully cooked, baste the pork belly with your preferred BBQ sauce and cook it for an additional minute or two to let the flavors meld.
Resting and Serving:
Remove the pork belly from the grill or oven and allow it to rest for a few minutes. This allows the juices to redistribute and the flavors to develop.
Chop or slice the pork belly into small pieces. If desired, you can baste it with additional BBQ sauce. Serve the succulent pork belly with your choice of Caribbean sides.
