This is one of the easiest and most surprisingly flavorful rice dishes I’ve ever made. It is surprisingly delicious because you won’t expect such robust flavors from the simple ingredients used. Prep takes two minutes and the cooking time is about 20 mins total.
In a small non-stick pot, heat coconut oil over medium heat.
Add onion and cook until edges are brown. Add green seasoning and garlic and cook for 2 minutes.
Add mixed veggies, pimento and hot pepper, if using, and cook for 1 minute.
Stir in rice and salt. Add 3 cups boiling water and stir to combine. Bring to a boil and cook until the rice grains appear on the top. Seal tightly with a cover, reduce heat to low and cook for 15 minutes or until your desired texture.
