Hello friends. Here is the recipe for the roasted asparagus I served with the meatloaf in my earlier post. This is a family favorite and disappears in seconds!
It was quick, simple, healthy and delicious and makes for a great side dish.
Roasted Asparagus Recipe
Ingredients
- 2 pounds fresh asparagus
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, chopped
- 1 tsp Himalayan Sea Salt
- 2 tbsp lemon juice, optional
Directions
1. Preheat the oven to 400 degrees F.
2. Wash asparagus thoroughly and break off the tough ends by bending it–it usually breaks when the tough and soft parts meet. Pat dry with a paper towel.
3. Place the asparagus on a baking sheet, mix the remaining ingredients and pour over and mix to coat with the dressing.
4. Spread the asparagus in a single layer and place in the oven.
5. Roast the asparagus for 10-15 minutes, until tender but still crisp. (Vary the cooking time according to your preference.)
