Many, many years ago during one of my visits to Trinidad, we (husband and I – no kids then) were invited to my niece’s in laws for a ‘lime'(Trini get together). There was card playing, laughter, rum, curry agouti (wild meat), french fries and these wings. The fries and fried chicken wings were served with Trini ketchup, mustard and lime pepper sauce. My mouth still salivates at the thought of that unforgettable meal, especially the fried chciken!
In this recipe, the chicken is seasoned with green seasoning, then dipped in eggs and coated with a seasoned flour and cracker crumb mixture. What makes this special is that the cracker crumbs are made using Crix crackers, Trinidad’s ‘vital supply’, which gives it not only a great flavor but loads of crunchiness.

Trini Fried Rice
TRINI FRIED CHICKEN
Ingredients
- 4 lbs chicken pieces wings, thighs or legs
- 4 tbs green seasoning
- 1 tbs salt
- 3 eggs whisked
- 2 cups Oil for frying
- 1 ½ cups cracker crumbs
- ½ cup all-purpose flour
- 1 tsp granulated garlic optional
- 2 tsp dried oregano optional
- 1 tsp onion powder optional
- 1 tsp paprika optional
- ½ tsp ground cumin optional
Sauce for fried chicken
- 1 cup ketchup
- 2 tbs soy sauce not dark
- 2 tbs sesame oil
- 1 tsp granulated garlic
- Hot sauce to taste
- 1 tsp green seasoning optional
Instructions
- Season chicken with green seasoning, salt and black pepper. Marinate overnight in the refrigerator.
- Whisk eggs and set aside.
- In a wide bowl(or resealable bag), mix flour, cracker crumbs and optional spices.
- Heat oil in a deep-frying pan over medium high heat.
- Dip chicken in eggs then cracker crumbs and flour mixture. Press until fully coated.
- When the oil is hot, gently place chicken wings in the pot and fry until golden brown. If you are shallow frying, flip and cook the other side.
- Repeat with the remaining chicken wings.
