This is a versatile cilantro chutney that can be used as a salad dressing or as a chutney on rice(see my cilantro rice), grilled or baked meat or seafood dishes! You can also substitute with culantro also known as bandhania (shado beni) in the Caribbean. Hope you enjoy!

Ingredients
- 1 cup extra virgin olive oil
- 1 small bunch cilantro or culantro (bandhania)
- 1 jalapeno seeded
- 1 pimento or hot pepper optional
- 1 tsp cumin
- 1 tsp salt or to taste
- 2 tablespoons vinegar optional
Instructions
- Place all ingredients in a blender and blend until smooth.
- Use as a dressing for grilled, baked or bbq’d meats and or seafood.
