Aunty Iya’s shrimp Lo Mein is a popular favorite at family gatherings, along with Cousin Maria’s macaroni pie.
This shrimp and noodles recipe is simple, quick and tasty. It is perfect for a weeknight meal.
Substitute shrimp for your favorite protein. Spaghetti is what makes this uniquely Aunty’s Iya’s, however, you can use lo mein noodles or your favorite pasta. If you don’t have hoisin or oyster sauce, just a mixture of soy sauce and sugar will work.
Regardless of the combination and ingredients used, you cannot go wrong!
Aunty Iya's Shrimp Lo Mein
Ingredients
- 12 oz spaghetti
- 1 tbs salt for boiling
- 1 tbs sesame oil
- 1 tsp garlic powder
To season:
- 2 lbs shrimp
- 2 tbs green seasoning
- 1 tbs minced garlic
- 1 tsp red pepper flakes
- 1 tbs soy sauce
- 1 tbs sesame oil
- Salt and black pepper
To Cook:
- 4 tbs oil
- Knob Ginger sliced
- 2 cloves garlic sliced
- 1 carrot julienned
- 2 celery stalks julienned
- 1 red bell pepper julienned
- 1 onion chopperd
- 4 scallions chopped
Sauce:
- 1/2 cup oyster sauce
- 1/4 cup hoisin sauce or black bean sauce
- 1 tsp soy sauce
- 1 tbs rice vinegar optional
- 2 tbs brown sugar
- 1 tsp minced garlic
Instructions
- Boil pasta in salted water according to package instructions, about 8 minutes. Drain and toss with garlic powder and sesame oil.
- Rinse and drain shrimp. Season with green seasoning, minced garlic, pepper flakes, soy sauce, sesame oil, salt, black pepper.
- Ina small bowl, mix oyster sauce, hoisin, soy sauce, sesame oil, rice vinegar, sugar and minced garlic.
- Heat oil, add ginger and garlic and cook until golden brown.
- Once golden brown, add seasoned shrimp and cook for 5 minutes, stirring.
- Add in carrots, celery, bell pepper, onion, scallions. Stir fry for 3 minutes.
- Stir in noodles and sauce and cook for 2 minutes, stirring.
- Taste and adjust seasonings as necessary.
