I remember cheese paste sandwiches were even served during wakes, accompanied by Hong Wing or a steaming cup of Nescafe coffee.

The cheese paste is wonderfully creamy, perfect for spreading on your favorite bread. However, there is a secret to the creaminess that we are sharing today.

Trini Cheese Paste Sandwiches
Ingredients
- 10 oz cheddar cheese finely grated
- 6 tbs butter 3 oz, 57 grams, room temperature
- 2 inches carrot 2 oz, grated
- 2 tablespoon yellow mustard
- ¼ cup evaporated milk or mayo
- 2 pimento peppers
- Hot pepper or pepper sauce to taste
- 2 cloves garlic grated
- 2 tbs bandhania minced optional
- Coloring optional
- 1 loaf sliced bread white or whole wheat
Instructions
- Using the finest side of a conventional grater, grate the cheese into a bowl. Mix in the remaining ingredients to your desired taste. Alternatively, place all of the ingredients into a food processor and pulse until evenly combined. If it is too thick, add more milk or mayo to achieve a smooth, spreadable texture.
- Divide the mixture into three portions and add coloring to two of them.
- Using a butter knife, spread one portion onto two slices of bread for single layered cheese sandwich or three or four slices of bread for two or three layers of cheese respectively.
- Trim off edges if desired and cut into triangles before serving.
