This is one of the easiest and most surprisingly flavorful rice dishes I’ve ever made. It is surprisingly delicious because you won’t expect such robust flavors from the simple ingredients used. Prep takes two minutes and the cooking time is about 20 mins total.
My cousin Maria, who lives across the street from my mom in Brooklyn, brings her lunch on Sundays. After lunch one Sunday, my mom could not stop raving about how delicious and buttery this rice is. I called my cousin to get the recipe and was surprised at the list of simple ingredients with no butter used. I was in disbelief especially after I made it myself and realized how delicious and buttery it is.
Maria said that her Haitian mother in law taught her that the browning of the onions is the secret to developing the special flavor. I hope you give this exquisitely simple rice dish a try and taste the flavors for yourself.

SEASONING RICE WITH MIXED VEGGIES
Ingredients
- 2 tbs coconut oil organic, unrefined
- 1 onion chopped
- 2 tbs green seasoning
- 1 tbs minced garlic
- 2 cups mixed veggies
- 2 cups jasmine rice rinsed
- 2 tsp Himalayan salt
- 3 cups water hot
- Pimento pepper optional
- Hot pepper optional
Instructions
- In a small non-stick pot, heat coconut oil over medium heat.
- Add onion and cook until edges are brown. Add green seasoning and garlic and cook for 2 minutes.
- Add mixed veggies, pimento and hot pepper, if using, and cook for 1 minute.
- Stir in rice and salt. Add 3 cups boiling water and stir to combine. Bring to a boil and cook until the rice grains appear on the top. Seal tightly with a cover, reduce heat to low and cook for 15 minutes or until your desired texture.
