Traditional Curry Chicken Curry chicken is essentially pieces of chicken seasoned with green seasoning and simmered in a flavorful curry base. Each cook has their own variation; however, there is one constant: the use of green seasoning. Green seasoning is a blend of herbs and aromatics and may include the following in any combination: scallions, thyme, bandhania (culantro or shado beni), parsley, cilantro, onion, garlic, pimento pepper, and hot pepper. Curry Chicken with Potato Curry chicken with potatoes is like Grandma’s love on a plate. It’s a classic dish where tender chicken pieces and hearty potatoes are simmered in a flavorful curry base. Much like the previous recipe, however, with the addition of potatoes. Potatoes not only add flavor but create a lush, luxurious gravy to pour on rice or soak up with roti!
Curry Chicken with Pigeon Peas – In this curry chicken variation, green pigeon peas are added. The green pigeon peas are first boiled to remove the ‘casaness’ or bitter flavor, and then added to the chicken in the pot. The chicken, peas, seasonings, and aromatics are simmered together, resulting in pure bliss in every bite.

In my recipe, the chicken pieces are seasoned with curry and fresh seasoning and then stewed using the traditional stewing process. Perfect with Grandma’s dhal and freshly steamed rice.
Turmeric Chicken (No Curry Powder) Turmeric chicken with tomatoes is my go-to easy and delicious chicken recipe that I can eat daily without any guilt.
They say necessity is the mother of invention. One day I realized I had no curry powder left but wanted to make a dish that was equally comforting and tasty. In an added twist, I also did not have any green seasoning left in the fridge so cilantro or scallion had to step in. A few ingredients later, this delicious recipe was born.
Turmeric powder goes a long way, so 1 tsp was sufficient for me. If you think the result is too light, you can increase it the next time around or add it during the cooking process. It also all depends on the type of turmeric powder you have on hand.
If you are too lazy to follow any steps, heat the oil, add all the ingredients, and simmer until the chicken is fully cooked. I have done this several times when I am not in the mood to cook, and it still turns out delicious.
Turmeric chicken will be your next lazy day, technically curry chicken with no curry recipe. Some may even call it chicken curry–dare I even go there?
