How to cook canned corned beef?
We all have a few cans of either salmon, tuna, sardine or corned beef in our pantry for those hunger and lazy day emergencies. Today I will share with you a very easy and tasty recipe that comes together in mere minutes. And yes, unlike canned tuna and sardine, you do need to cook canned corned beef before consuming it mdue to its high fat content. Cooking softens the corned beef, melts the fat and amplifies the flavor.
Ingredients You Need to Make Canned Caribbean Corned Beef & Tomatoes:
- extra virgin olive oil
- onion, chopped
- plum tomatoes, chopped
- garlic, minced
- scallions, chopped
- thyme
- Hot pepper, to taste, usually scotch bonnet, habanero or wiri wiri pepper
Tips:
- This recipe uses canned corned beef and tomatoes as the base, but feel free to get creative and add your own variation with cabbage, potatoes or bell peppers. Cook the finely chopped potatoes first before adding the canned corned beef. The cabbage and/or bell pepper can be added at the end of cooking.
- Don’t want the heat? Simply remove the seeds from the hot pepper before chopping.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
What to serve with canned corned beef?
This comforting dish is typically eaten with sada roti, fried bakes, crackers, hops bread , homemade loaf bread, or just plain rice for a hearty and satisfying meal.

Caribbean Corned Beef & Tomatoes
Ingredients
- 2 tbs extra virgin olive oil
- 1 small onion chopped
- 2 ripe plum tomatoes chopped
- 4 cloves garlic minced
- 2 scallions chopped
- 3 sprigs thyme or 1 tsp thyme leaves
- Hot pepper to taste
Instructions
- Open corned beef, remove from the can and cut into small pieces.
- Heat oil in a medium pot over high heat.
- Add onion, hot pepper and cook for 1 minute until the edges are brown.
- Stir in tomatoes, garlic and cook 3 minutes until tender, aromatic and separate from the oil.
- Stir in corn beef, breaking up chunks and mix well to combine.
- Add chopped scallions, thyme and cook 5 minutes, stirring, until all the flavors meld.
- Taste and add black pepper and salt if required.
