As a young girl growing up in Trinidad, my grandma taught me to make ‘choat’, it was a crepe like dessert made with a mixture of flour, sugar and milk. It satisfied my desire for something sweet after running around the neighborhood, playing and making mischief. Grandma made it during times of fasting from salt, my guess was for energy. Boy, did I have energy after eating it too. It was one of the first desserts I learned to make, given that it had only three simple ingredients and so easy to whip together! Made for a happy childhood.
Nowadays, I serve these ‘grown up’ crepes, a slight variation from my childhood concoction, for my family with scrambled eggs with veggies, bacon, bananas, and nutella, cream cheese and smoked salmon, or ligonberry or other jam.
Crepes have been a favorite in my house for two decades and I hope it becomes a favorite in your household as well.

Crepe Recipe – Ingredients:
- 4 eggs, lightly beaten
- 1 1/3 cups whole milk
- 2 tablespoons butter, melted
- 1 cup all-purpose flour
- 1 tablespoon powdered sugar (or granulated or brown sugar)
- 1/2 teaspoon salt
Instructions on How to Make Crepes?
- In a large bowl, whisk together eggs, milk, and melted butter. Add flour sugar, and salt and continue to whisk until smooth.
- Heat a tawa, medium-sized frying pan, or crepe pan over medium heat.
- Rub a small amount of butter or oil applied on the surface with a brush or paper towel.
- Using a 1/3 cup measuring cup or ladle, pour the crepe batter into the hot pan, tilting the pan in a circular motion to ensure that the batter is thin and even.
- Cook 1 to 2 minutes each side, or until golden brown. Repeat with the remaining batter. Serve immediately.
