In this recipe, lamb chops are simply seasoned with Caribbean green seasoning, garlic and lemon juice to allow the flavor of the lamb to shine.
Now that the weather is getting nicer, we already have the grill out. Since I always have green seasoning on hand, seasoning the lamb takes less than a minute. I season on a Saturday and allow it to marinate for a day in the fridge. On Sunday, my husband throws it on the grill –without any involvement from me—which means I don’t have to labor on the stove or in the kitchen.
We enjoy bbq lamb with macaroni salad, fried rice and a salad.
