In this Grilled BBQ chicken recipe, chicken legs and thighs (leg quarters) are marinated overnight in a blend of green seasoning, salt, black pepper, all-purpose and adobo. The last two are optional but good when you need a variation.

After marination, the longer the better, you will need to bring the chicken to room temperature to allow for even cooking on the grill.

The grill is heated, and the chicken is placed in and cooked until the meat is fully cooked and takes on a lovely grilled color. In most cases, color equals flavor, so don’t miss out due to impatience.

  • salt
  • black pepper
  •  all-purpose seasoning, optional
  • adobo, optional
  • 1/4 cup extra virgin olive oil
  • BBQ sauce, homemade or store-bought

  1. Clean chicken
  2. Season and marinate.
  3. Bring to room temperature.
  4.  Heat Grill. Grill –or bake in the oven.
  5. Baste with BBQ sauce and cook.

  • Clean chicken removing feathers, trimming excess skin and fat. Wash chicken with the juice of a lime or lemon. Drain.
  • Season with green seasoning, salt, pepper, all purpose and adobo if using. Marinate overnight for best results. You can season thr chicken, place in freezer bags and freezer until ready to use.
  • When ready to grill, remove the seasoned chicken from refrigerator or freezer, bring to room temperature.
  • Place in a single layer on a baking tray or dish, drizzle with oil and place in a preheated oven --350 degrees Fahrenheit. Alternatively, heat grill to high. Place chicken on oiled grill.
  • Cook until bottom is dark golden brown. Baste with BBQ sauce. Flip
  • Baste with BBQ sauce and cook to your desired doneness, stirring occasionally
