I prepared this grilled chicken kebab for lunch a few Sundays ago and served it along with my cilantro lime rice, grilled lamb kebabs, a greek inspired salad with feta and some cilantro dressing to drizzle on both the meat and the salad.
It’s a great combination that keeps you feeling guilt free. The ingredients are simple, healthy and fresh and prep is super quick. GRILLED CHICKEN KABOBS (CHICKEN KEBABS)
Ingredients
- 2 lbs chicken breast
- ¼ cup green seasoning
- 2 teaspoons salt
- 1 tsp black pepper
- 2 tablespoons extra virgin olive oil
- 1 teaspoon cumin optional
- 1 tablespoon minced garlic
- 1 red pepper cubed
- 1 red onion cubed
Instructions
- Cut chicken into 1 inch cubes.
- Place in a bowl, cover with water and squeeze the juice of a lime or lemon. Let it sit for several minutes. Rub chicken to remove any sliminess and rinse several times with water. Drain.
- Season chicken with ¼ cup green seasoning, salt, black pepper, extra virgin olive oil, cumin, minced garlic and lemon juice if using. Marinate several hours or overnight in a bowl covered with plastic wrap or in a resealable bag.
- When ready to grill, slide meat cubes into skewers alternating meat with red peppers or red onion.
- Pre Heat grill. When hot place chicken skewers on grate and cook until charred. Flip and cook the other side until lightly charred as well.
- Serve with rice, pasta salad, garden salad and cilantro dressing.
