Week 25 – Simple Menu, Big Flavor Wins

Today’s plan was simple: less chaos, more flavor—and it worked. With seasoned chicken already prepped, the goal was to get a nourishing Sunday lunch on the table and prep some meals for the week—all while keeping the mess (and stress) to a minimum.

The Plan

The original menu was baked chicken, geera chicken, stewed lentils, and rice. I started by boiling the lentils. I had already decided on a low-mess approach, and dhal—though delicious and also perfect with stewed chicken—meant longer cooking time. So I leaned into stewed lentils instead. Thick, savory, and full of veggies and herbs, it made perfect sense. Sometimes the best dishes come from adjusting the plan mid-cook.

Rethinking the Chicken

As I eyed the bowl of seasoned chicken, I thought about cutting it up to cook faster. But again—I remembered the day’s mission: simplicity. So instead of baking or chopping, I stewed the whole chicken legs. The result? Juicy, tender meat cloaked in a rich, tomato and caramelized brown sugar-based gravy, gently spiced and full of that traditional browning flavor we all love.

A Surplus of Tomatoes = Choka Time

With two burners already occupied–and a need to add a veggie dish to the menu, I glanced at the extra tomatoes sitting on the counter. They weren’t going to last much longer. I quickly decided on a roasted tomato choka, tossing them under the broiler with garlic, hot pepper and onion. Here’s the trick: add more pepper and it becomes a fiery pepper choka—so depending on your mood (or spice tolerance), this one dish pulls double duty. The roasted flavors were smoky, bold, and balanced beautifully with the rest of the meal.

The Carrot Salad (Back by Demand)

Earlier in the week, I shared a quick carrot salad on Instagram Stories that sparked a lot of interest—so I took the opportunity to work on the full recipe today. Crunchy, tangy, and slightly sweet, it added a burst of freshness that balanced out the earthy lentils and savory meats.

Yellow Rice, the Easy Way

I’m still testing the recipe, but today’s halal cart–inspired yellow rice, made right in the rice cooker, came out light, buttery, and beautifully spiced with turmeric, garlic, and a touch of cardamom and cloves. It paired effortlessly with everything on the menu and soaked up all the saucy goodness from the stewed chicken and lentils.

The Final Act: 20-Minute Geera Chicken

Once the lentils were stewed and simmering, I had two burners free—and geera chicken was next. It’s a quick 20-minute recipe, but don’t let the speed fool you. Thanks to the deep roasted cumin (geera), it’s incredibly flavorful with an earthy, smoky heat. I added some of the leftover roasted tomato juices to build the sauce and help the chicken cook faster. A final sprinkle of ground cumin brought it all together with that signature depth we crave in this dish.

Peace, Chai, and a Clean Kitchen

Once everything was cooked, I plated it up for a photo (and you know I had to snap a shot for this post!). I served lunch to my husband, tidied up the kitchen—he helped with the dishes—then packed up lunchboxes for the week. And to seal it all with a bit of peace, I poured a hot, comforting cup of masala chai and finally sat down
