That’s exactly how this recipe began.

One day, while shopping at my local West Indian supermarket, I picked up a one-pound bag of dried lima beans and challenged myself to create something new. I wanted to step outside my usual routine, experiment with another variety of bean, and hopefully inspire others to do the same. There was another reason this recipe found its way into my kitchen.

As I’ve moved into my 50s, I’ve become much more intentional about the meals I prepare for myself and my family. I still enjoy meat, seafood, and the traditional Caribbean dishes I grew up eating, but I’m also making a conscious effort to include more beans, fiber, and plant-based protein in my weekly meals. Rather than replacing the foods I love, I’m simply creating a better balance by giving legumes a more prominent place on our table.

This recipe is part of that personal journey.

Research on healthy eating patterns consistently encourages eating more legumes, and I’ve found myself exploring different varieties of beans that I may have overlooked in the past. Not only are beans an economical pantry staple, but they’re also filling, versatile, and an easy way to add more plant-based protein and fiber to everyday meals.

I make curry channa quite often because it’s one of my favorite side dishes and one my husband always enjoys alongside curry and stewed meals. This particular pot of curry lima beans also came together thanks to a little meal-prep creativity. I had one cup of frozen mixed vegetables left over from Sunday meal prep—green beans, carrots, and sweet peas—that I had originally planned to use in fried rice. Instead of letting them sit in the freezer any longer, I added them to the pot. They brought color, texture, and a little extra nutrition while helping me reduce food waste.

I also chose to leave out potatoes from this version. While curry potatoes are delicious and can certainly be added, I wanted the lima beans to remain the star of the dish while keeping the recipe a little lighter.   • No Instant Pot? No problem! Follow the same recipe on the stovetop using about 6 to 8 cups of hot water, adding more as needed depending on the rate of evaporation, and simmer until the beans are tender.
  • Add potatoes: If you enjoy curry channa and aloo, add about 1 pound of potatoes, peeled if desired and cut into wedges. Add them to the Instant Pot with the beans before pressure cooking. Once cooked, gently mash a few of the potatoes with the back of a spoon to naturally thicken the curry.
  • Customize the vegetables: I used 1 cup of frozen mixed vegetables (green beans, carrots, and sweet peas) left over from my Sunday meal prep, but you can easily make this recipe your own. Try frozen corn kernels, diced carrots, another favorite vegetable, or omit the vegetables altogether.

At first, the curry may appear a little thin, but don’t worry—it will continue to thicken as the beans cool and release their natural starches.
